My love for entertaining often intersects with the chaos of my busy life. When this happens, I cling to simple, fresh recipes that are sure to please! This salsa recipe is so easy, yet it bursts with fresh flavors unlike any other! If you're in a rush, you can purchase prepared fresh fruit at your local market (I've been known to do that a time or two). You don't even have to fire up the stove for this one, so give it a go!
1 ½ cups diced fresh pineapple
1 ½ cups diced fresh watermelon
1 ½ cups diced fresh mango
2 ripe avocados
1 jalapeno, thinly sliced
3 tablespoons fresh cilantro, chopped
3 tablespoons finely minced red onion
juice of 1 lime
2 tablespoons honey
2 tablespoons tequila (optional)
2 tablespoons olive oil
pinch ground cinnamon
1 teaspoon kosher salt
fresh ground pepper to taste
In a large non-reactive mixing bowl, add pineapple, watermelon and mango. Continue by adding jalapeno, cilantro, onion, honey, lime juice, tequila and olive oil. Stir to combine and refrigerate for at least one hour but no more than overnight. Dice fresh avocado and add to salsa with salt and pepper to taste right before serving.
Serve with sweet potato chips or tortilla chips.
