Fresh Peach Mojito

This recipe for a Fresh Peach Mojito is exactly what summer needs!

Words just can't express my love for SUMMER! Time at the the pool..whatever, it's all fun! Here in Nashville, we're lucky enough to have The Peach Truck, a local business which brings up beautiful fresh peaches from a family farm in Georgia. When you pair up my time living in the South with my Cuban heritage, you're bound to get some tasty recipes. This fresh peach mojito is no exception. Feel free to experiment with the amount of simple syrup to adjust the level of sweetness to your personal preference. 1 fresh peach

1.5 ounces simple syrup

2 ounces light rum

1 fresh lime

2 sprigs fresh mint



Fresh Peach Mojito from

Start by washing your peach, removing the pit and cutting it into quarters. Cut the lime into wedges. Place 1/4 of the fresh peach and 1/4 of the lime in the bottom of a tall glass with half of your mint. Muddle it together with a muddler (you can use the handle of a wooden spoon if you don't have a muddler). Make sure you do it well enough to squeeze the juice from the lime, mash the peach and release the flavors from the mint. Add simple syrup (made with equal parts of boiling water and granulated sugar) and rum. Fill the glass with ice and top with seltzer. Stir to combine and garnish with wedges of peach and lime and a sprig of mint. Enjoy!
